‘The Happiest Plates On Earth’: Spiced Ginger and Sweet Corn Cocktail- Inspired by ‘The Emperor’s New Groove’

When it came time to choose something to do for my fifth recipe in this series, I was really stumped as to what film I should pick. Nothing was jumping out at me on the long list I’ve created. As I was sitting in my living room the night before I would be cooking whatever it was, making my husband brain storm with me, I mentioned in passing that it would be cool to do a drink for one of my recipes. It was too bad that no princess movies involve a potion.

‘Well, Emperor’s New Groove does,’ he shrugged.

‘Ohhhhh, right’.

Awesome!

I learned pretty early on that this was one of his favorite Disney movies, and one that I had only seen one time all the way through, so I was ready to take his lead with this one and go with it. I started by researching Peruvian cocktails and looking into what llamas eat. It turns out the answer to both is corn. What I ended up with is a cross between a Pisco Sour and a Moscow Mule, which is kind of close to a llama.  The egg white foam worked as a ‘cloud’ on top of the cocktail, representing the angel on Kronk’s shoulder, and the devil was represented by the extra spiciness added in to it.

Okay, so let’s get to it!

 

Spiced Ginger and Sweet Corn Cocktail
Prep Time: 15 minutes
Makes: 2 twelve ounce drinks

Corn Juice:

2 ears fresh sweet corn, cut from cob
1/2 cup water
4 mint leaves
4 basil leaves
1 piece candied ginger
1 teaspoon kosher salt

Combine ingredients in blender and puree. Pour through fine mesh strainer, pressing to get all the liquid through. Chill.

Jalapeño  Syrup:

1/4 cup water
1/4 cup granulated sugar
1 fresh jalapeño, sliced

Combine ingredients in small saucepan on stovetop. Bring to boil. Remove jalapeños  from simple syrup. Chill syrup.

Mixing Cocktail:

Fortunately, we already owned this!

8 leaves fresh mint, torn
8 leaves fresh basil, torn
Zest and Juice of 2 Limes
2 egg whites
1 teaspoon kosher salt
2 shots vodka (optional)
1/2 cup corn juice
1/4 cup jalapeño syrup
Ice Cubes

Combine vodka (if desired), corn juice, jalapeño syrup, lime zest, lime juice and fresh herbs in cocktail shaker. Shake for one minute and open. Add in egg whites and replace lid. Shake vigorously. Open shaker again and add in ice and salt. Shake vigorously.
1 Can of Ginger Beer
Slice of lime
Mint Leaves
Pinch cayenne pepper
Fresh cracked black pepper

Pour one half can of ginger beer into each mug. Pour half of mixture from cocktail shaker on top. The egg whites should create a foam that sits on top. Garnish with lime, mint, cayenne and cracked black pepper.

Yeah, we owned these mugs too.  We are very fancy people.

We aren’t really alcohol drinkers, but I tried it with and without the vodka, and it’s tasty and refreshing either way.  This would definitely be a great drink to serve this summer at a party.  Hope you enjoy it!
